Foods of Ecuador!

Waterbury and its 'burbs are experiencing a recent increase in Ecuadorian immigration, so I thought I would post a few pics from my recent trip to Ecuador, where I did some work in Emergency Medicine. I didn't get to eat out nearly as much as I hoped to, but here are some highlights. I hope to find an Ecuadorian restaurant in CT soon!

The food looks great. I am going to Ecuador soon for the first time. I have been living vicariously by making recipes that I have found on Laylita's website. I don't know how authentic they are, but they are delicious! I have eaten at the Ecuadorian Restaurants in Danbury and Bridgeport and I like them both.Have you tried them. They are not that far for you.
